In airports food preparation and food delivery all needs to be done quickly, because people are under a time crunch, at the mercy of airline schedules – often with short connections that airlines engineer in order to maximize the time their planes are in the air and to minimize total travel time on connecting itineraries which drives up ticket sales relative to competitor schedules. Self-service is a part of that, but so driving down costs and pushing sales is as well.

Newark Airport Beer Is Expensive, And Congress Wants Answers
Last week I wrote about airport concessions operator OTG charging $28 plus tax and tip for beer at Newark airport. This clearly violates their lease to abide by ‘street pricing’ rules.
While there’s no longer $28 beers for sale at Newark, four members of Congress want in on the outrage.
New Partnership Will “Fully Reimagine” Airport Starbucks
Airport food locations aren’t actually run by the restaurant names you know. Restaurants will license the concept, and collaborate on menus, with concessions companies like HMS Host, Delaware North, and OTG.
HMS Host had an exclusive deal to offer Starbucks in U.S. airports since 1991. We learned last week that this exclusive deal is over, though existing Starbucks locations should remain in airports through the duration of the HMS Host-airport contract at least.
Here’s what’s next for Starbucks in airports. Hint: it may involve iPads.
